Ingredients:
2 tbsp Cashew Lemon Pop from @sageandfolly
1 zucchini, zoodled/julienned
1 big broccoli, chopped
1 onion, diced
1 tsp garlic, chopped
1 green chilli
1 cup vegetable stock or water
2 tbsp basil leaves chopped
1 tsp olive oil-optional
Salt to taste
Method:
1. Using a spiralizer, zoodle the zucchini. Sprinkle the salt and set aside
2. Heat the oil in a pan and add the onion and garlic and let it cook on slow flame for about 2-3 minutes. Set aside to cool
3. Steam the broccoli and set aside
4. In a blender, blend together the broccoli, onion garlic mixture, green chilli and the Cashew Lemon Pop until smooth
5. Once blended add in a pan and cook on medium low flame for 5 minutes.
6. Add in the basil and the vegetable stock or water and bring the sauce to a simmer and cook for 5 minutes
7. Slowly add in the zoodled zucchini and toss together on low flame for a minute or so. You can skip this step and add the sauce directly on the zucchini.
8. Garnish with basil and olives serve :)
